
Wusthof Le Cordon Bleu:
Wusthof designed these knives several years ago as an attempt to add several features that compete favorably with Japanese Knives. These knives have no bolster, are lighter and have sharper blades than Wusthof's other lines. They also have a thin blade forged from a single blank of high carbon steel with excellent balance.
Our only complaint is the handle design which is borrowed from the Classic line. Most people are familiar with the 3 rivet design of these handles but there are better ergonomic handles on the market and they should have used this opportunity to update the handle as well. It's a small complaint on an otherwise excellent knife.
We feel these Wusthof knives are the best designed of the 5 lines we have tested. They have combined the best attributes of Japanese knives with the bolsterless design and very steep angle on the edge. These knives are consequently well balanced, light and have superior sharpness. The handle design is traditional with 3 rivets that many will be accustomed to from Wusthof's Classic line. This line gets a grade of A.
