Wusthof Ikon Knives Review

Wusthof Ikon Knives are a newly developed and designed line (their 7th) for 2007. Why so many knives? Well, once you start a line people tend to buy small sets and then keep adding to their collection. This makes it hard to discontinue existing lines. But times change and technology improves even in an industry like cutlery so they want to make updated versions with improved performance characteristics as well as better aesthetic designs. We think Wusthof has achieved both of these goals with their new Ikon knives. 

The first big improvement is they offer a tapered bolster. The bolster is meant to protect your finger from the blade edge which is a good thing. The problem with most bolsters is they tend to get in the way of sharpening. After years of sharpening, the bolster sticks out beyond the blade and is both unsightly and makes it difficult to chop with the blade flat on the cutting board. A tapered bolster allows for easy use and sharpening and all kitchen knives should have them. The new Ikon knives do.

Next, the handle design has been updated and improved. It offers a nice ergonomic black resin handle with 3 rivets which feels good in the hand and also is well balanced. Overall the fit and finish of these knives is excellent. 

Our only complaint is the metal cap on the handle which is very attractive but makes the knives a little heavy in the hand and moves the balance point back more than we would like. It's a small complaint on an otherwise excellent knife. Overall we give this line a grade of A and feel it should be your first or second choice when considering a Wusthof knives from the 7 lines they offer. The other excellent choice is the Wusthof Le Cordon Bleu.
