OVERVIEW:
Viking Knives are crafted in Solingen, Germany which is the knife making capital of the country. Each knife is forged and ground from one piece of steel that is made of a combination of high carbon - chromium - and vanadium stainless steel that is rust and stain resistant. The knives have a very distinctive metal cap at the base of the handle which we think is very attractive but also ads extra weight and makes the knife a little handle heavy. The blade edge is beveled which makes them tough and long lasting but also makes the somewhat dull in comparison to high quality Japanese Knives on the market today.
Finally, Viking chose a traditional bolster that runs the length of the heel of the knife which does protect your finger but also makes sharpening awkward over time and ads more weight to the knife. The knife comes in a truly horrendous corrugated package which makes gift giving a problem. You will need to re-wrap them. All in all a descent choice but not our favorite knives on the market today. In the German category we like the Wusthof Le Cordon Bleu and in the Japanese category we like Misono.
