I had read a lot about the
Tojiro DP line after I started frequenting this forum. My curiosity piqued, I ordered one over New Years and it came in three days before I was going to do a dinner for 40. A perfect chance to try it out.
But before I get into that, here are just some of my general observations about the knife. The Tojiro, unlike some other
Japanese Knives, is actually quite tall with a decent amount of heft to it. Rather than making it feel heavy or bulky, though, it makes it feel sturdy. Despite it's heft, though, the blade itself is actually quite thin. Mine came slightly over 2mm at spine over heel and quickly tapered down to a very nice OOTB edge which was further improved upon taking it to the stones.
NOTE: Despite what you might read on Korin's website might, this knife is actually hard stainless steel clad in soft stainless. Very soft stainless. I was actually surprised how easily the cladding scratched.
Now, onto performance. For the dinner of 40, I actually used a couple of knives, but as near as I can figure I used the Tojiro for around 10 pounds of potatoes, 2 pounds of carrots, 3 pounds of onions, 3 pounds of sweet potatoes, 8 pounds of apples, celery, fennel, celery root, london broil, and a crap ton of garlic and herbs. After all of that, all I can say is WOW!!! I was really impressed by this knife and now understand why it's the first recommendation for anyone looking to start up a knife addiction. The potatoes were butter, as were the Onions, carrots, and celery. In fact, about the only thing it didn't just glide through was the sweet potato, which I had to scallop. And as for edge retention, I can honestly say that I didn't notice much of a difference from beginning of the night through the end. I wish the other
knives I used could say the same!
All in all, this is a phenomenal knife. Especially for the money. It may not be a looker, but this knife performs as well as those twice the price. And it's OOTB sharpness and great edge retention make it perfect for those just getting into knife nuttery or as a gift to convert family and friends to knife nuttiness! I just can't say enough good things about this knife.
