Takayuki knives are pretty rare in the US market but there are a few companies that are now offering these knives and they are a welcome addition to the high end kitchen knife scene. Long a favorite in Japane, Takayuki based in Sakai offers a
big selection of quality knives some of which are hand made by master craftsmen.
Steel quality is the reason Japanese Knives perform better than other knives on the market today and this is
evidendt when testing the Sakai-Takayuki Inox line of knives. These knives are made with Molybdenum and Chromium which provides a degree of corrosion resistance.
The knife we tested was the Takayuki 8 inch Chef's knife. The Handles are pretty standard POM resin and are tough and resistant to stains. Balance of the knives was good and like many Japanese Knives they are light. The edge on these particular knives has a 50/50 bevel which allows both right handed and left handed users to use the knife. These knives are hand sharpened and finished by seasoned craftsmen and you can tell with the knives testing extremely well out of the box for sharpness. Overall we think these knives are an excellent value and would make most professionals happy with their use.
