Misono Knives Review
Overview:
Misono knives are made in Japan and are almost unheard of with American cook's other than professionals. That is a shame. Having reviewed over a dozen kitchen knife brands over the years, we believe the Mison UX 10 line is the best production kitchen knife line on the market today. What makes the special are a combination of design factors. First, the balance of the knives is almost perfect which makes you feel like the knife is an extension of the hand. Second, the bolsterless design allows you to sharpen the knife for years without having to worry about grinding into it over time. Third, the quality of the steel is such that the knife can be sharpened with a very steep angle and still hold it's edge. This means a razor sharp knife that will stay sharp over longer periods of use. Finally the knife is aesthetically pleasing. This knife gleams in your hand like a jewel.

There have been several reviews of these knives over the years. Most raved about the sharpness, balance and keen edge. One reviewer said the UX 10 was.. "very comfortable and well balanced; it is stiff, strong, and sharp. This type of blade is good to sharpen on a whetstone."
What We Think:
Our staff has used Mison knives for several years and we think they are the best knives on the market today. They make great gifts for the avid cook in any family but they are still difficult to find in the US. The only true drawback is the price. At close to $200 retail for a 9" Chef knife this kitchen knife is not cheap but after you use it for a month you will never want to use another kitchen knife.
