Global Knives Review

 

Just over 10 years ago, Global made its debut in the United States market. The success has been remarkable and has led to many other Japanese knife manufacturers opening offices in the US. This is a good thing for cook's in America. Global has a distinctive, all stainless steel look, but what really separates these knives from traditional German forged knives is their lightness and super sharp, non beveled edge.

The first time we sliced an orange with a Global G-2 Chef's knife we gasped as the knife slipped through the rind and flesh of the fruit with effortless ease. Our only issue with the knives is the handles are a little on the light side and lack ergonomic design which makes them feel a little awkward in the hand. There is a huge selection of knives to choose from which can be confusing. We are going to give you some specific recommendations on how to build a great set of Global knives one knife at a time. Overall we give this knife line a B+.

#1 Global Chef Knife G-2: This is the 8" Chef Knife and is essential to any cook's collection. The chef knife is used 70-80% of the time and the G-2 is light, nimble and scary sharp. If you are going to buy just 1 Global knife get a G-2.

#2 Global Paring Knife G-38: This small paring knife is an excellent choice for doing intricate cutting and peeling. While Global offers a number of different paring knives we like the G-38 because of the ergonomic handle design. In fact, we wish they would offer this on more of their knives. The fit and feel are much improved over the others.

#3 Global Bread Knife G-9: The third best knife we feel is a good bread knife. The G-9 is long enough to cut crusty breads and large fruits like melons or pineapples.

#4 Global Boning Knife G-21: The 3 knives above will handle 95% of all your needs. The only think that is missing is a good boning knife. The Global G-21 is perfect for boning chickens.

#5 Global Sashimi Knife G-11: This knife is a bit of a luxury item in the kitchen but if you ever need super thin slices of fish it is essential for making sushi. It also works very well a a roast slicer.
