There are several publications that rate kitchen knives including ceramic knives. Reviewers are very positive on ceramic knives sharpness and ability to keep a sharp edge for much longer than traditional stainless steel knives. However, many think they should not be used as general use kitchen knives due to the fact that the blades are somewhat fragile and do chip occasionally. Also, several reviewers mentioned that due to the specialized sharpening equipment required to sharpen ceramic knives, sharpening should be done by Kyocera which offers this service for a small charge.
What We Think:
Our staff has used Kyocera Knives for several years and we recommend them but not as your everyday all purpose knife. The high end Damascus blades are much more durable than the lower priced lines so if you would like to try a ceramic knife this is an instance where it pays to buy the high end.
